JAAN By Kirk Westaway has been sitting on our to-go list for the longest time. Back then, with limited funds in our accounts, a dinner close to $1000 seem almost impossible, after all we had two children and stacks of bills to pay. Years passed, we thank God that we made it, so on our recent 8th wedding anniversary, we finally checked JAAN off the list.

There are restaurants that you go for a simple dinner. But there are also restaurants that you go for memories. JAAN is no doubt the latter. The moment you exited at level seventy of Swissotel, you will be greeted with a vast, panoramic view of Singapore's city skyline. The tables spaced comfortably, dressed in premium white. Sculptural chandelier hung just overhead.

The service staff sat us down and a bubbly drink connoisseur explained the drinks to us. I got myself a cocktail while the lady had some vintage Rosé (it was close to $80 for probs a few mouthfuls, but she enjoyed every sip).
Starters came. Tasteful. Mouth-size bites. The service staff elucidate every single item like art pieces, while the menu states each item quite literally.
Cheddar Straws
Goose Mousse
Fish and Chips
Crab Pancake
We are huge lovers of bread, and theirs were absolutely delicious, paired with their homemade butter - soft, rich, sinful. This was a combination second to none. They were nice enough to gift each table a complimentary loaf (butter included!)

Charred Leek and Potato Soup
White Beetroot
Hen's Egg
Wild Turbot
Every element. Crafted and plated with precision and intent.
At some point, Chef Kirk came to greet every table briefly. It was
By the time Kagoshima Wagyu arrived, we were already filled quite to the brim. Still, paired with foie gras, the tender beef somehow melted its way into our bellies.

Gin & Tonic came just in time to wash the jelak away before the desserts came. There was a choice of Chocolate Hazelnut or Pear & Caramel, and naturally we had one of each, both of which are equally good. As if that wasn't enough, there was also a tower of desserts and a complimentary cake (if it's a special occasion!)

The whole experience lasted three hours, from starters to desserts. It was lengthy like a concert or a recital, but we enjoyed every single moment of it. The taste. The view. The interactions. We were one of the last to leave, and took photo opportunities. Unfortunately Chef Kirk was entertaining two lady guests (we get it), if not we would had love a photo with the man himself. With drinks, the dinner costed close to $1.1k including taxes and service charges, we were literally filled so much so we skipped a few meals the next day. JAAN - definitely an event to remember.
