Recipe: Chocolate Chip Banana Muffin

The weekends are coming, and what is better than spending your lazy Saturday afternoon baking?  (Well, other than lazing on your bed.) A while back, I found this banana-licious recipe and decided to try it out. It is fairly easy to make, and the result is absolutely yummy. Delicious treats and definitely great for parties.

Difficulty: Easy

Makes 16 regular-sized muffins

Ingredients

1 3/4 cups all-purpose flour
3/4 cup sugar
1 tsp baking powder
1 tsp baking soda
1/2 tsp salt
1 egg
1/2 cup vegetable oil
1/2 plain yogurt
1 tsp vanilla extract
1 cup mashed ripe bananas
3/4 cup semi-sweet chocolate chips

Steps

1. In a large bowl, combine flour, sugar, baking powder, baking soda and salt.

2. In another bowl, combine egg, oil, yogurt and vanilla extract.

3. Stir into dry ingredients just until moistened.

4. Fold in mashed bananas and chocolate chips.

5. Fill greased or paper-lined muffins cups two-thirds full.

6. Bake at 180C/350F for 22-25 minutes or until toothpick comes out clean.

7. Cool for 5 minutes before removing from pans to wire racks.

Tips

1. For easy and mess-free mashed bananas, place 3 ripe bananas (depending on size) into a plastic food bag and mash them up.

2. Try substituting plain yogurt with flavoured yogurt for additional flavours. You can also add in chopped nuts and raisins for the extra texture.

3. If you do not have yogurt at home, fret not. Substitute it with milk or sour-cream. The result would be a lighter and moister muffin.
