Recipe: Egg Benedict + Literally Pay Lesser with Paylesser!

What's up my beautiful readers, because today, you are in for a treat. Ever thought of making cafe-grade brunch but you're not confident of your cooking skills? Or perhaps you are afraid to mess up your kitchen? I feel you, because that's what I used to be like this. Cooking is supposed to be fun, delicious, and seeing the smiles (hopefully) of people eating your creations is just worth it.

Okay, I am saving my saliva, or rather my finger strength for something else (if you know what I mean - to make more food la. Don't think dirty hor). Presenting to you limbeh's version of Egg Benedict, completed by toasted English bread, fresh Arugula salad, crispy prosciutto ham, and a beautifully poached egg slathered with homemade hollandaise sauce. Sounds complicated? (Actually it's just putting stuff together. lololol)

~ 30 minutes ~

Yields 2 sandwiches

Ingredients

2 slices of bread (brioche/English bread or regular ones will do)
4 slices of prosciutto ham
fresh arugula (or rocket leaves, or any salad, really.)

2 eggs
2 tbs white vinegar

2 egg yolks
4 tbs unsalted butter, melted
1/2 tbs lemon juice
dash of cayenne pepper
dash of nutmeg

freshly ground black pepper and sea salt to taste

Steps

1. In a non-stick saucepan, on medium-high heat, fry the prosciutto ham till crispy (or till it reaches your preferred crispiness). Set aside. Keep warm.

2. In the same saucepan, turn down to medium heat, drizzle a little oil (or butter), and toast your bread on both sides.

3. In a separate saucepan, fill it with 2 to 3 inches of water and bring it to almost a boil. Mix in the white vinegar. Crack the egg into separate small bowls. Here comes the exciting part (if you're a first timer). Using a spoon, swirl the water in a clockwise direction, and quickly slid the egg into the middle of the mini-whirlpool. If it's done right, the egg whites will wrap around the yolk beautifully. Cook for about 2-3 minutes, or until the whites are set, but the yolk is still jiggly. Remove with a slotted spoon and dab the excess water with a paper tower.

4. For the hollandaise, whisk the egg yolk and lemon vigorously over a double boiler on medium heat (make sure that the bowl/plate is not directly touching the water). After a few minutes, the mixture will become silky and pale. Slowly drizzle in the melted butter while whisking to incorporate. Continue to whisk until the mixture thickens to the consistency of melted chocolate. Remove from heat, add in a sprinkle of salt, cayenne pepper and nutmeg.

5. What's left is to assemble it. You can slather some butter onto the toast first, layer it with some salad, then two slices of prosciutto ham, more salad, the poached egg, and then the hollandaise sauce. Serve immediately.


Sounds difficult? No right? Okay, I will admit, the hollandaise sauce might take a few tries to succeed. The first few times I tried, I ended up with scrambled eggs because I did not whisk throughout and the heat was too high. Other than that, it's pretty okay, doesn't take a lot of time to impress someone on bed. Sorry, that meant to be breakfast in bed.
